  • 2 egg yolks

Step 1: Prep & preheat

  • Preheat oven to 350°F (175°C).
  • Grease and line an 8×8-inch pan with parchment paper, leaving some overhang.

Step 2: Make the crust & crumble

  1. In a medium bowl, mix oats, flour, baking soda, salt, and brown sugar.
  2. Stir in melted butter and vanilla until crumbly and well combined.
  3. Press 2/3 of the mixture into the bottom of your prepared pan.

Step 3: Make the lemon filling

  1. In a bowl, whisk together sweetened condensed milk, lemon juice, zest, and egg yolks until smooth.
  2. Pour filling over the crust in the pan and spread evenly.

Step 4: Top & bake

  1. Sprinkle the remaining oat mixture over the lemon layer.
  2. Bake for 25–30 minutes, until the top is lightly golden and the center is set.

Step 5: Cool & chill

  • Cool completely, then refrigerate for at least 1–2 hours before slicing into bars.
