For the brownie layers:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs

  • 1/2 teaspoon salt

For the filling:

Step 1: Preheat & prepare

  • Preheat oven to 350°F (175°C).
  • Line two 9×13-inch pans with parchment paper, leaving overhang for easy lifting. (Or bake one at a time using the same pan.)

Step 2: Make the brownie batter

  1. In a large bowl, mix melted butter and sugar until combined.
  2. Whisk in eggs and vanilla until smooth and glossy.
  3. Stir in cocoa, flour, and salt until just combined.
  4. Divide the batter evenly between the two prepared pans and smooth the tops.

Step 3: Bake

  • Bake each brownie layer for 15–18 minutes, just until set. Do not overbake—you want them soft but not gooey.
  • Cool completely, then chill in the fridge or freezer for cleaner cuts.

Step 4: Assemble the sandwiches

  1. Lift one brownie layer out of the pan and place it flat-side up.
  2. Spread softened ice cream evenly on top.
  3. Gently place the second brownie layer over the ice cream, flat-side down.
  4. Press lightly and wrap the whole slab tightly in plastic wrap or foil.

Step 5: Freeze & serve

  • Freeze for at least 4 hours (overnight is best!).
  • Once firm, slice into squares or rectangles with a sharp knife. Wipe between cuts for neat edges.
