🍕 Keto Pizza with Fathead Dough

Ingredients (for the crust):

  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp cream cheese
  • 1 cup almond flour
  • 1 egg
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp Italian herbs (optional)

For the toppings:

  • 1/4 cup sugar-free pizza sauce (or crushed tomatoes with herbs)
  • 1/2–3/4 cup shredded mozzarella
  • Your fave low-carb toppings:
    • pepperoni, cooked bacon, olives, mushrooms, spinach, bell peppers, jalapeños, etc.
  • Fresh basil or chili flakes, for garnish

🔥 Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Make the dough:
    • In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave for 1 minute, stir, then microwave for 30 more seconds until melted and smooth.
    • Stir in almond flour, egg, garlic powder, and herbs. Mix well to form a dough.
    • If it’s sticky, knead it a bit between parchment paper.
  3. Shape the crust:
    • Roll out the dough between two sheets of parchment paper into a pizza shape (thin but not too thin!).
    • Transfer to a baking sheet or pizza stone and bake for 8–10 minutes or until golden and set.
  4. Add toppings:
    • Spread the sauce, sprinkle cheese, and pile on your toppings.
    • Bake for another 5–7 minutes, until the cheese is bubbly and slightly golden.
  5. Cool slightly, then slice & enjoy!
