Thai Broccoli Rice is such a fresh, zesty, and healthy alternative to regular rice! It’s light, flavorful, and pairs perfectly with curries, grilled meats, or even as a stand-alone side dish. Plus, it’s keto-friendly and packed with nutrients.
🥦 Thai Broccoli Rice
Ingredients:
- 1 large head of broccoli (or 2–3 cups pre-chopped broccoli florets)
- 1–2 tbsp olive oil or coconut oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 small chili (optional for heat), finely chopped
- 2 tbsp fish sauce
- 1 tbsp soy sauce or tamari
- Juice of 1 lime
- 1 tsp grated fresh ginger
- 1/4 cup fresh cilantro, chopped
- 1–2 tbsp toasted sesame seeds (optional, for crunch)
- Salt & pepper, to taste
🧑🍳 Instructions:
- Make the broccoli rice:
Pulse the broccoli florets in a food processor until they resemble rice grains (you can also chop by hand if you prefer). Set aside. - Sauté the aromatics:
Heat oil in a large pan over medium heat. Add chopped onion and cook until softened (about 5 minutes). Add garlic, chili (if using), and ginger, and sauté for another minute. - Cook the broccoli rice:
Add the broccoli rice to the pan and stir. Cook for 5–7 minutes, stirring occasionally, until the broccoli is tender but still has some bite (not mushy!). - Season:
Stir in the fish sauce, soy sauce, lime juice, and season with salt and pepper. Taste and adjust seasoning if needed. - Finish & serve:
Remove from heat, stir in cilantro and sesame seeds. Serve immediately with your favorite Thai dish or grilled protein.
